CHICKEN GYROS ON A HOMEMADE ONION ‘SPIT’ – Dish off the Block

Ingredients

The Chicken and Marinade:

3-3 ½ pounds boneless, skinless chicken thighs

1 cup plain Greek yogurt

8 garlic cloves, chopped

2 teaspoons Dish off the Block Ciao Bella Italian Spice Blend

2 teaspoons salt

2 teaspoons paprika

2 teaspoons coriander

2 teaspoons cumin

1 teaspoon black pepper

2 tablespoons lemon juice

 

The Tzatziki Sauce:

2 cups English cucumber, chopped into ¼ dice

1 teaspoon salt, divided

2 cups plain Greek yogurt

8 garlic cloves, minced

2 tablespoons fresh dill, chopped

Zest from 1 lemon

2 tablespoons lemon juice

 

The Gyros:

1 large Vidalia or other ‘wide-shaped’ onion for the ‘spit’

2 tablespoons olive oil

6-8 fresh pita breads (or naan breads)

1 cup English cucumber, chopped into ¼” dice

1 cup grape or cherry tomatoes, cut in half

½ cup red onion, finely chopped

1 cup crumbled feta cheese
