Instructions:
1. Preheat oven to 400°F (200°C).
2. Prep potatoes: Toss baby potatoes with 1-2 tbsp olive oil, minced garlic, salt, and pepper. Spread them out on a baking sheet. Roast for about 20 minutes.
3. Add asparagus & salmon: After the potatoes have roasted for 20 minutes, push them to one side of the baking sheet. Drizzle asparagus with olive oil, salt, and pepper, and add to the sheet. Place salmon fillets on the other side, drizzle with olive oil, season with salt, pepper, lemon zest, and lay lemon slices on top.
4. Bake everything: Roast for another 12-15 minutes, until salmon is cooked through and flakes easily, potatoes are tender, and asparagus is bright and slightly crisp.
5. Serve: Garnish with fresh herbs if you like. Serve hot with an extra squeeze of lemon.
