Caldeirada de Peixe (Portuguese Fish Stew – Visstoofpot)

Ingredients (Serves ~4)

  • 350 g mixed fish (e.g., cod, sea bass, monkfish, or local catch)

  • 200 g potatoes, sliced (~1 cm thick)

  • ¼ red bell pepper, thinly sliced

  • ¼ green bell pepper, thinly sliced

  • ½ head garlic, finely chopped

  • 1 large onion, finely chopped (plus a few onion rings reserved)

  • 100 g tomato purée (or 200 g fresh tomatoes)

  • 2 bay leaves

  • 100 ml white wine

  • 300 ml fish broth

  • 50 ml olive oil

  • Salt to taste

  • Fresh coriander, chopped, for serving
