Cottage Cheese and Veggies Bake

Instructions

  •  Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish with cooking spray or olive oil.
  • In a large bowl, combine cottage cheese, eggs, salt, and pepper.
  • Add the diced zucchini, chopped red bell pepper, chopped broccoli florets, grated carrot, finely chopped red onion, and minced garlic to the bowl.
  • Stir in the dried oregano, if using.
  • Pour the mixture into the prepared baking dish.
  • If desired, sprinkle the top with grated Parmesan or cheddar cheese.
  • Bake for 30-35 minutes, or until the bake is set and lightly golden brown.
  • Let cool slightly before serving.
