
Cottage Cheese and Veggies Bake
Instructions

Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish with cooking spray or olive oil.

In a large bowl, combine cottage cheese, eggs, salt, and pepper.

Add the diced zucchini, chopped red bell pepper, chopped broccoli florets, grated carrot, finely chopped red onion, and minced garlic to the bowl.

Stir in the dried oregano, if using.

Pour the mixture into the prepared baking dish.

If desired, sprinkle the top with grated Parmesan or cheddar cheese.

Bake for 30-35 minutes, or until the bake is set and lightly golden brown.
