Did you know that 1.3 billion bananas are wasted globally each year, often tossed for being too speckled?
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and grease a 4×8 inch loaf pan.
- In a mixing bowl, mash the ripe bananas with a fork. Stir in the melted butter.
- Mix in the sugar, egg, and vanilla extract. Sprinkle the baking soda and salt over the mixture and stir in.
- Add the flour and cinnamon, mixing until just combined. Pour batter into prepared loaf pan.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Cool in pan for 10 minutes, then transfer to a wire rack.
