Instructions:
Preheat oven to 325°F (163°C). Grease a 9-inch springform pan.
In a medium bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press mixture into the bottom of the prepared pan.
In a large bowl, beat cream cheese and 1 cup sugar until smooth. Add melted white chocolate and vanilla extract, beating until combined.
Add eggs one at a time, beating well after each addition.
Fold in sour cream and pour mixture over the crust.
Bake for 55-60 minutes, or until the center is set.
Allow to cool, then refrigerate for at least 4 hours before serving.
Top with fresh sliced strawberries before serving.
